Chia seeds have a ton of health benefits! In addition to being high in protein, they are filled with fiber and antioxidants. Since they contain so much healthy protein, they are filling and satisfying.
They are also high in omega 3 fatty acids. Chia seeds are great for bone health since they contain calcium, magnesium and phosphorus.
How To Make
Step 1
First, add all ingredients to a mixing bowl. Stir to combine.

Pour into 3 jars.

Then, refrigerate for at least 4 hours, up to overnight.

Expert Tips & Tricks
Use a ripe mashed banana to add natural sweetness and flavor. If desired, use another mashed berry. Blueberry, raspberry, strawberries and blackberries all work well.
I have found that some chia seeds work better than others. I use and suggest Better Body Foods, which I buy from Amazon.
This recipe must be made with canned coconut milk. Almond milk or cashew milk will not thicken. In addition, this will yield a very runny chia seed pudding.
The longer this chia pudding refrigerates, the better!
Whole30 Breakfast Without Eggs

This sounds wonderful ! except for the 382 cal and only a few grams of protein. Anyway, to get down the amount of coconut milk that is used? For instance, could you combine some almond milk with the coconut milk and still get it to thicken?
Hi Lynn! The calories are based on full fat coconut milk, which is extra creamy but higher in calories. Feel free to use a little almond milk. It will still become creamy if you allow it to thicken for a few hours. Enjoy!

What about adding Cacao for a chocolate flavor?
That works well! Cacao is bitter, so this pudding will not be sweet. For a non Whole30 option, I would probably add a touch of maple syrup or honey. Enjoy!
This is my favorite Whole30 compliant chia seed recipe. I have tried many different recipes but this one gives a nice thick texture and the flavor is lightly sweet from the banana. We love it and make it all the time.

I’ve been making this recipe for the last few years whenever I’m sick of eggs for breakfast and it never disappoints. I generally add the mashed banana and berries like the blog states to sweeten it. A good, easy, non-egg healthy breakfast!
I can’t seem to get the clumps out of the coconut milk even after putting in my stand mixer twice is there a trick to this? Still going to put in the fridge and hope for the best in the morning!
Hi Erin! That seems strange. Are you trying to mix coconut milk that is cold or room temperature? I find it easier to mix when room temperature. Hope this helps!
