Paleo Strawberry Banana Bread Recipe

Recipe Steps
Step 1
First, preheat oven to 350 degrees Fahrenheit and line a bread pan with parchment paper. I like to lightly spray the bottom of the dish before setting the parchment paper down.
Step 2
In a large mixing bowl, mix mashed bananas, eggs, and vanilla extract.
Step 3
Then, sift in almond flour and tapioca flour. Add in all remaining ingredients, except strawberries.
Step 4
Toss 3/4 cup strawberries with 1 tablespoon tapioca flour.
Step 5
Once coated, add strawberries to the batter.
Step 6
Pour batter into lined bread pan. Top with remaining strawberries.
Step 7
Bake for 55 to 65 minutes, or until a toothpick inserted comes out clean.
Step 8
Lastly, remove from oven and cool completely before slicing.

- Pour batter into the lined bread pan. Sprinkle remaining strawberries on top.
- Bake for 55 to 65 minutes, or until a toothpick inserted comes out clean. If bread is browning on top but isn't done baking, add aluminum foil on top and continue baking.
- Finally, remove from oven and cool completely before slicing.

Hi Addison, thank you for your recipes! Can I use cassava flour instead of tapioca flour?
You are welcome! The only substitutes for tapioca flour are arrowroot starch and cornstarch. I cannot confirm that cassava would work as a replacement. If you try it, please let me know!
The recipe was tasty, but it didn’t cook well for me. I cooked it for 60 minutes and cut into it a few hours later. Then cooked it for an additional 20 minutes. It was just too moist. Any suggestions on what could have happened?
Can I uzs this recipe.to make muffins instead of bread?
I think that would work. I’d bake them at 350 degrees Fahrenheit for 15 to 20 minutes. Hope you like them!Â
