Unsweetened coconut flakes add the delicious coconut flavor.

The cookies are chewy and slightly sticky. They are no bake, so they are not as chewy as traditional baked cookies.

How to Make

Step 1

First, line a pan with parchment paper.

Step 2

Add the pitted dates and coconut flakes to a food processor.

Step 3

Process for 30 seconds, or until the mixture sticks together between your fingers.

Form the mixture into flat discs. Place on the lined pan.

Use the end of a wooden spoon to form a hole in the middle of each cookie.
