Creamy Whole30 Mashed Cauliflower
This Creamy Whole30 Mashed Cauliflower is super easy, extra smooth and the perfect addition to any meal! This cauliflower mash is just as great for a weeknight dinner as it is for Thanksgiving. It is Whole30 approved and made with just a handful of ingredients. I especially love it paired with Whole30 Paleo Braised Short Ribs. Talk about comfort food. Let’s get cooking!
Ingredients
About 4 cups of chopped cauliflower florets is needed for this recipe. This is the equivalent of one large head of cauliflower.
Coconut cream is a dairy free equivalent to heavy cream. In addition, it makes this Whole30 Mashed Cauliflower super creamy!
Ghee is the lactose free version of butter. Also, it gives this cauliflower mash that signature buttery flavor.
Just a little freshly chopped basil goes a long way!
How To Make
Step 1
To make Whole30 Mashed Cauliflower, first chop head of cauliflower into florets. Then, add florets to a food processor. Process until mixture resembles riced cauliflower. Alternatively, chop cauliflower very finely.
Step 2
Then, add riced cauliflower, coconut cream, and ghee to a skillet over medium heat. Cook 7 to 8 minutes, or until all coconut cream is absorbed.
Step 3
Next, carefully pour mixture back into the food processor. Process until smooth and creamy.
Step 4
Serve. Garnish with chopped basil and extra ghee if desired.
How can I thicken my mashed cauliflower?
For extra thick Whole30 mashed cauliflower, add only the thick part of the coconut cream. Canned coconut cream naturally separates. The top layer is usually very dense and thick while the bottom layer is watery.
Is mashed cauliflower better than potatoes?
Mashed cauliflower has all of the bells and whistles of mashed potatoes. In addition, it’s an extra serving of vegetables!
What does Whole30 mashed cauliflower taste like?
This Whole30 Mashed Cauliflower tastes a little bit like cauliflower, a lot like ghee/butter, and slightly similar to mashed potatoes. Feel free to add some salt, pepper, garlic powder, etc. to your liking.
What is ghee?
Ghee is the lactose free version of butter. Ghee is made by cooking butter until all the milk solids (white parts on top) have been removed. Its taste is identical to butter, but it’s richer and more flavorful.
