A Keto diet is low in carbs. Peanut butter is somewhat low in carbs and can be eaten on a Keto diet.
Peanut butter contains 7 grams of carbs and 3 grams of fiber per 2 tablespoons. Thus, peanut butter contains 4 net carbs per serving.
If eaten in moderation, yes, peanut butter is Keto.
Ingredients & Substitutions
Use all natural creamy peanut butter for best results. I love the brand Teddie’s since it is made with only peanuts and salt. Peanut butter made with palm oil, preservatives or added sugars is too thick for this recipe.
Brown sugar Swerve is a great Keto brown sugar alternative for these cookies. For non Keto, light brown sugar is great. For Paleo, use coconut sugar.
The egg is very important. Since these Keto peanut butter cookies are flourless, the egg helps bind the dough together. I do not recommend an egg replacement or flax egg.
The vanilla extract adds the perfect touch of flavor.
Baking soda is the leavening agent used to help these cookies rise.
There are some great Keto chocolate brands on the market. I use and love Lily’s dark chocolate chips.
How to Make
Step 1
First, preheat oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper.
Step 2
In a large bowl, mix together peanut butter and Keto brown sugar.
Step 3
Then, stir in egg, vanilla extract, and baking soda.
Step 4
Once combined, fold in Keto chocolate chips.
Step 5
Use cookie scoop to drop balls of dough onto lined pan.
Step 6
Bake for 9 to 10 minutes or until cookies are just set in the middle.
Step 7
Finally, remove from oven. Allow cookies to cool on pan for 5 minutes. Then transfer to a cooling rack to finish cooling.

If dough is sticking to cookie scoop, spray scoop with nonstick spray. Mine did not stick at all.

I planned to freeze these cookies but they never made it to the freezer . This time I’m making a double batch.
Anyway they were a little bit too sweet for me so next time I’m going to put a little less Swerve brown in it. The other thing that I did was I used half Lily’s chocolate chips and half choc zero peanut butter chips. I flattened the cookies a little and then just put two or three of each kind of chip on the top of each cookie pushed in. Everybody loved them!

Could you provide how many net carbs are in each cookie if made as directed (Swerve, low sugar dark chocolate chips, etc)?
Hi Lana! The nutrition facts include those Keto ingredients. They are 7 net carbs per cookie.
The nutritional information was kind of crazy. They are really net seven carbs per cookie?! Bummer
When I put all these ingredients into Carb Manager it came out to be three net carbs per cookie. Hope that helps.

So seven carbs per cookie is pretty extreme! (Minus the fiber) Do you have a net carb count somewhere? Maybe they would be less if you told us how many carbs Swerve brown equaled. I enjoy being able to make some thing with out nut flour but I can’t make a cookie that’s seven carbs after you minus the fiber. I’m also bummed that so many people gave you five stars but didn’t even try the recipe yet! I’m giving it three stars both because important information is missing and to counter the ridiculous five stars without trying! The reason I did not try it yet is because I want the actual net carb count first please.
