Gluten Free Lemon Madeleines
These Gluten Free Madeleines are such a fun little treat! They are known for their cake like texture and signature shape. These Lemon Madelines are light, fresh, and so yummy! The easy lemon glaze is the perfect topping. I am a huge fan of lemon desserts. Lemon Madeleines are no exception!
What are Madeleines?
Madeleines are a small French cake. They are sponge like, light, and resemble the shape of a shell. Madeleines are baked in a specific pan, giving them their classic look.
Ingredients
EGGS: Three eggs are used to make these Lemon Madeleines cake like.
ALMOND FLOUR: A popular Paleo and gluten free baking flour, almond flour is slightly nutty and hearty.
COCONUT FLOUR: Coconut flour balances out almond flour perfectly. In addition, it’s very absorbent and slightly sweet.
TAPIOCA FLOUR: Similar to cornstarch, tapioca flour helps thicken the Madeleine dough.
BAKING SODA: These little cakes puff up quite a bit while baking. This is all thanks to baking soda.
MAPLE SYRUP: Maple syrup is a great Paleo liquid sweetener. For these Paleo Madeleines, maple syrup sweetens them.
GRASS FED BUTTER: The key to these little French cakes is butter. I use a grass fed butter. Coconut oil can be substituted but won’t provide that signature buttery flavor.
ALMOND MILK: Almond milk helps smooth out and moisten the dough before baking.
VANILLA EXTRACT: Just a little bit goes a long way!
LEMON JUICE & ZEST: These Lemon Madeleines contain both lemon zest and juice for a bright and light flavor.
COCONUT BUTTER: When melted, coconut butter is smooth and creamy. It is a great Paleo option for “icing”.
How to Make Gluten Free Madeleines
Step 1
First, preheat oven to 350 degrees Fahrenheit and heavily grease a Madeleine pan.
Step 2
Next, whisk eggs for 2 minutes or until light and frothy.
Step 3
Sift all three flours into a large mixing bowl. Add whisked eggs and remaining Madeleines ingredients. Stir until a thick dough is formed.
Step 4
Then, spoon dough into greased pan.
Step 5
Bake for 12 to 14 minutes or until edges are slightly crispy and Madeleines have puffed up.
Step 6
Remove from oven and allow to cool. Melt coconut butter and stir in lemon juice. Finally, drizzle over cooled Madeleines.

Lemon Madeleines
- 3 eggs
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 2 tbsp tapioca flour
- 1 tsp baking soda
- 1/2 cup pure maple syrup
- 1 stick grass fed butter, softened, 1/2 cup total
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 1 tsp lemon zest
Glaze
- 1/3 cup coconut butter
- 1/2 tsp lemon juice
Equipment
- Madeleines pan
Instructions
- First, preheat oven to 350 degrees Fahrenheit and heavily grease a Madeleine pan with nonstick spray.
- Then, whisk eggs in a bowl for 2 minutes or until light and frothy.
- Sift almond flour, coconut flour, and tapioca flour into a large mixing bowl. Then, add eggs and remaining Madeleines ingredients.
- Stir until combined. Batter will be thick.
- Use a spoon to fill Madeleine molds about 3/4 of way full (see picture above).
- Next, bake for 12 to 14 minutes or until edges are golden and middles have puffed up.
- Remove from oven and cool.
- To make the glaze, melt coconut butter. Stir in lemon juice.
- Spoon glaze over the cooled Madeleines.
