Ingredients & Substitutions

Russet potatoes tend to hold up best. If desired, sweet potatoes also make great potato skins!

Substitute the melted ghee for melted butter or olive oil. A brush of avocado oil works too.

Ground beef can be substituted with ground sausage, ground pork, ground turkey or ground chicken. Use your favorite ground meat.

Feel free to omit pepperoni for Whole30, or use chopped Chomps pepperoni sticks.

Add or omit any of the garnishes. The Ranch dressing adds some “cheesiness” but nutritional yeast would be great as well.

Is Pizza Whole30 Compliant?

Traditional pizza is not Whole30 compliant since it contains gluten, dairy and sugar.

These Whole30 pizza potato skins use all Whole30 compliant ingredients. They are different enough from regular pizza to be considered compatible.

The potatoes get crispy in the oven and act like a crust. The pizza filling has classic pizza flavors. The Ranch dressing adds a bit of creamy cheesy flavor.

As always, use Whole30 approved brands for this recipe. Whole30 pizza sauce brands include Rao’s and Primal Kitchen Foods. There are several Whole30 ranch brands, but I used Primal Kitchen Foods. Use Chomps pepperoni sticks for pepperoni.

How to Make

Step 1

First, preheat oven to 400 degrees Fahrenheit. Line a baking pan with parchment paper.

Step 2

Microwave potatoes for 7 to 8 minutes or until fork tender. Carefully remove from microwave.

Step 3

Meanwhile, make the pizza filling. Add ground beef to a skillet over medium heat. Cook until brown and crumbly.

Step 4

Drain off excess grease from pan. Add diced onion, minced garlic, pepperoni and pizza sauce to skillet. Stir together. Cook for 4 to 5 minutes or until onions are tender.

Step 5

Carefully slice each potato in half lengthwise. Scoop out insides of potato, leaving about ½ inch of potato around the edges.

Step 6

Melt ghee or butter in microwave. Brush onto edges and insides of potatoes.

Step 7

Spoon pizza filling into potatoes. Place on baking sheet.

Step 8

Bake for 7 to 8 minutes or until potatoes are crispy.

Step 9

Finally, remove from oven and garnish with desired toppings!

Choose similar sized potatoes. This ensures more even cooking.

Russet potatoes tend to hold up best in the oven. I recommend using Russet.

Melted ghee, melted butter or olive oil all work well to coat insides and edges of potatoes. This allows the potatoes to get extra crispy in the oven.

Ingredients

  • 6 large Russet potatoes
  • 2 tbsp ghee, or grass fed butter
  • ½ pound ground beef
  • ¼ cup diced onion
  • 1 tbsp minced garlic
  • 12 pepperoni, see note
  • ¼ cup Whole30 pizza sauce
  • basil, for garnish
  • Whole30 ranch, for garnish
  • green onion, for garnish

Instructions 

  • First, preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  • On a microwave safe dish, microwave potatoes for 7 to 8 minutes or until fork tender. Remove potatoes from microwave with an oven mitt. They are very hot!
  • While potatoes are microwaving, make pizza filling. Add ground beef to a skillet over medium heat. Cook until brown and crumbly, breaking up with a spatula.
  • Once cooked, drain off excess grease. Add in diced onion, minced garlic, pepperoni and pizza sauce. Stir. Cook for 4 to 5 minutes or until onions are tender.
  • Carefully slice each potato in half lengthwise. Scoop out insides of potato, leaving about ½ inch of filling around the edges.
  • In a small microwave dish, melt ghee. Brush melted ghee on the inside and edges of each potato.
  • Scoop pizza filling into each potato. Place potatoes on parchment lined pan.
  • Bake for 7 to 8 minutes or until potato skins are crispy.
  • Finally, remove from oven and garnish with desired toppings.

Notes

  • Select large potatoes that are similar in size.  Russet potatoes tend to work best since their skin holds up.
  • Ghee or grass fed butter both work well.  For a dairy free option, substitute olive oil.
  • For a Whole30 pepperoni option, I use cut up Chomps Pepperoni sticks.
  • Be very careful with handling potatoes.  They are very hot after they’ve been microwaved.
  • When scooping out the potato, leave about ½ inch of potato filling around the skin.
  • Bake until skins are crispy.  Keep a close eye on them while baking.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
