If there is one recipe I make more than any other, it’s sweet potato fries.  I make them at least once a week!  They’re just THAT good plus they go well with just about everything.  My sweet potato obsession started a couple years ago when I was training for my first marathon.  They became my favorite source of carbs to help fuel me through long runs.  Since then, I’ve enjoyed them on a weekly basis with everything from turkey burgers to pulled pork!  Check out these Vegan Zucchini Fries for another fun idea.
