If there is one recipe I make more than any other, it’s sweet potato fries.  I make them at least once a week!  They’re just THAT good plus they go well with just about everything.  My sweet potato obsession started a couple years ago when I was training for my first marathon.  They became my favorite source of carbs to help fuel me through long runs.  Since then, I’ve enjoyed them on a weekly basis with everything from turkey burgers to pulled pork!

Ingredients:

2 large sweet potatoes, sliced
1.5 TBL coconut oil, melted
Sea salt, if desired
Ground pepper, if desired
Whole30 Ketchup

Directions:

Preheat oven to 400 degrees.

Slice sweet potatoes and arrange on a baking sheet.

In a small bowl, melt coconut oil.  Brush coconut oil on one side of the sweet potatoes.  Flip over and brush coconut oil on other side.  Sprinkle with sea salt and pepper (optional).

Bake for 40 minutes, flipping after 20 minutes.

Serve with Whole30 Ketchup or your favorite dipping sauce.
