Paleo Chocolate Chip Cookie Skillet
Just when you thought Paleo chocolate chip cookies couldn’t get any better, they do! This Paleo Chocolate Chip Cookie Skillet is SO fun and incredibly delicious. Ingredients
ALMOND FLOUR & COCONUT FLOUR: Both almond flour and coconut flour are common Paleo baking flours. When used together, they create the perfect texture for baked goods.
GHEE: Ghee is clarified butter (i.e. butter with the lactose removed) and it’s a healthy and delicious cooking fat.
COCONUT SUGAR: Coconut sugar is a very popular Paleo granulated sweetener. For a skillet cookie lighter in color, substitute the same amount of maple sugar.
DARK CHOCOLATE CHIPS: Don’t go light on these!
OTHER INGREDIENTS: eggs, coconut oil, baking soda, vanilla, sea salt

How To Make
Step 1
First, preheat oven to 350 degrees Fahrenheit.
Step 2
Add ghee, coconut oil, eggs and coconut sugar to large mixing bowl or KitchenAid. Beat until light and frothy. Once combined, add all remaining ingredients except chocolate chips.
Step 3
Next, fold in chocolate chips.
Step 4
Then, add dough to skillet and spread evenly. Bake for 17 to 18 minutes or until edges are golden and middle is set.
Step 5
Lastly, remove from oven and serve! Store leftovers in an airtight container in the fridge for up to 4 days.
Expert Tips & Tricks
For the best cookie skillet, cream together ghee and coconut sugar until light and frothy, at least 2 minutes.
In addition, sift in almond flour and coconut flour to prevent clumps of flour.
Lastly, spread cookie dough into one even layer in the skillet before baking!
Bake until edges are golden and middle is just set. Do not over bake!

- Next, sift in almond flour and coconut flour. Add remaining ingredients except chocolate chips.

- Next, add dough to an 8 inch oven safe skillet and smooth into one even layer.
- Then, bake for 17 to 18 minutes or until edges are golden and middle is set.
- Lastly, remove from oven and serve with coconut milk ice cream if desired.

So easy and a stunning dessert!
Loving this recipe, the coconut oil and sugar add a great flavour to the cookie. I need to make the coconut icecream to go with it next time!
This was so fun for my daughter and her friend to make at their sleepover- and it was delicious! We topped it with coffee ice cream and a little chocolate syrup, and of course sprinkles. The warm cookie and cold ice cream was perfect.
