Mini marshmallows melt quickly and easily. If you only have jumbo marshmallows, those work fine. Be sure to melt them completely.

These homemade gluten free rice krispies treats taste exactly like the store bought version, but they are even thicker and slightly softer!

They are sweet, but not overly so.

How to Make

Step 1

First, line a 9 inch by 9 inch square pan with parchment paper.

Step 2

In a large skillet or pot, add the butter over low medium heat.

Once the butter has melted, add in the mini marshmallows. Consistently stir until the marshmallows have melted.

Then, turn off the heat. Add in the vanilla extract and rice cereal. Stir until all of the cereal is completely coated in the marshmallow mixture.

Use a spatula to transfer into the prepared pan. Gently pat down into one even layer.

Allow the bars to set for 30 minutes before slicing into. To speed this up, feel free to chill in the fridge.
