These gluten free rice krispies treats are such a fun and nostalgic treat! They are gooey, crunchy, chewy, and sweet. This quick and easy recipe is great for an afternoon snack or dessert!

Ingredients

Instructions 

  • First, line a 9 inch by 9 inch square pan with parchment paper.
  • In a large skillet or pot, add the butter over low medium heat.
  • Once the butter has melted, add in the mini marshmallows. Consistently stir until the marshmallows have melted.
  • Then, turn off the heat. Add in the vanilla extract and rice cereal. Stir until all of the cereal is completely coated in the marshmallow mixture.
  • Use a spatula to transfer into the prepared pan. Gently pat down into one even layer.
  • Allow the bars to set for 30 minutes before slicing into. To speed this up, feel free to chill in the fridge.
  • Finally, use a large sharp knife to carefully cut into bars!

Notes

  • Regular rice krispie cereal is not gluten free because it contains malt.
  • Be sure to double check that the rice cereal you are using is gluten free.

  • Stir until all of the cereal is coated in the marshmallow mixture.
  • Allow the bars to set before slicing into.
  • Store any leftovers in an airtight container at room temperature for up to 7 days.
