Chicken breasts or chicken thighs will work in this soup. I recommend finding good quality chicken. ButcherBox is a great option which features free-range organic chicken.

Use fresh vegetables for best results. White onion is best for this recipe.

Canned coconut milk provides the creamy texture. Use canned coconut milk, not coconut cream.

Tapioca flour thickens this soup. Substitute arrowroot powder or cornstarch (not Whole30) if needed.

Whole30 Bone Broth

Bone broth is Whole30 compliant if all the ingredients themselves are Whole30. There are a few things to look out for when choosing a bone broth.

Look at the ingredients list itself. Avoid anything with added sugars, wheat, carrageenan or soy.

Several brands make compliant bone broths.

These include Bare Bones Broth, Kettle & Fire, Bonafide Provisions, Thrive Market, and Kitchen Basic.

As always, some of these companies also have broths are not compliant, so double check nutrition labels.

How to Make in Instant Pot

Step 1

First, cut chicken into 1 inch pieces. Season with thyme and rosemary.

Add chicken broth, chicken and veggies to Instant Pot.

Secure lid. Pressure cook on high for 15 minutes.

Step 4

Allow pot to sit for 10 minutes. Then, manually release remaining pressure.

Press cancel. Then press sauté. Stir in coconut milk.

Remove 2 tablespoons liquid from pot. Add to small bowl and stir in tapioca flour.

Add this mixture back to pot. Stir to combine.

Step 8

Simmer for 5 to 10 minutes or until desired consistency is reached. Finally, ladle AIP chicken soup into bowls and serve.

Stovetop Instructions

  • Add broth, cubed seasoned chicken, veggies and coconut milk to large skillet.
  • Bring mixture to a boil. Then, reduce to a simmer.
  • Simmer for at least 20 to 30 minutes.
  • Remove 2 tablespoons liquid from skillet. Mix with tapioca flour.
  • Add this mixture back to skillet.
  • Stir until desired thickness is reached.
  • Finally, serve Whole30 chicken soup.

Slow Cooker Instructions

  • Add broth, cubed seasoned chicken, veggies and coconut milk to slow cooker.
  • Cook on low for 5 to 6 hours or high for 3 to 4 hours.
  • Just before serving, remove 2 tablespoons liquid from slow cooker. Mix with tapioca flour.
  • Add this mixture back to slow cooker.
  • Stir until desired thickness is reached.
  • Lastly, serve Whole30 chicken soup.

How to Serve & Store

Serve Whole30 chicken soup hot for best results. Garnish with fresh thyme or rosemary if desired. A little slice of avocado goes a long way too!

Store leftovers in an airtight container in the fridge for up to 4 days. To reheat, pour soup into a skillet and head on low until warm.

Freeze soup in an airtight container for up to 2 months. Thaw and then reheat as needed.

Ingredients

  • 1 pound chicken breast, cut into 1 inch pieces
  • 1 tsp ground thyme
  • ½ tsp rosemary
  • 32 ounce chicken broth, about 4 cups
  • 1 cup chopped carrots, about 3 large carrots
  • ¼ cup diced onion
  • 1 cup chopped celery, about 3 stalks
  • 1 cup spinach
  • 1 can coconut milk, about 14 ounces
  • 2 tbsp tapioca flour, or arrowroot powder

Instructions 

  • First, cut chicken into 1 inch pieces. Rub thyme and rosemary all over chicken.
  • Pour chicken broth into Instant Pot. Add in chicken, carrots, onion, celery and spinach.
  • Secure lid on Instant Pot. Pressure cook on high for 15 minutes.
  • Once the timer goes off, allow pot to sit for 10 minutes. Then, carefully push top valve to Vent and manually release pressure.
  • Once pressure is released, take off lid. Press Cancel. Then press Sauté. Stir in canned coconut milk.
  • Carefully remove about 2 tablespoons of the liquid in the pot. Add this liquid to a small bowl and stir in tapioca flour.
  • Pour this mixture back into the pot. Stir to combine. Allow soup to simmer for 5 to 10 minutes or until it thickens slightly.
  • Finally, turn off pot. Ladle into bowls and serve!

Notes

  • If using frozen chicken, let it thaw enough so that it can be chopped into 1 inch pieces.  The cooking time will not change.
  • When dealing with Instant Pot, always use an oven mitt and be careful to not burn yourself.
  • Use canned coconut milk, not coconut cream.
  • When mixing liquid with tapioca flour, mix completely.  This will be a milky creamy substance.  See photo above for reference.
