List of Ingredients

Almond flour is the base of these cookies.  Almond flour, made from ground up almonds, is a great Paleo option for baking.  The texture is lighter than traditional flour and the taste is slightly nutty.

Coconut flour is extremely absorbent and therefore is used best in small quantities.  Used in combination with almond flour, it adds just the right amount of sweetness to the cookies. For more about gluten free flours, check out my handy Gluten Free Flours and Gluten Free Baking blog post!

Just a teaspoon of vanilla extract is needed here.  It adds a depth of flavor to these sugar cookies.

Grass fed butter is the perfect cooking fat for sugar cookies.  It adds a buttery flavor to these cookies.  I wouldn’t recommend substituting for coconut oil here since the oil wouldn’t add the right flavor.  Ghee works just as well.

Maple syrup is a great refined sugar free option for sweetener.  I suggest using a high quality pure maple syrup.  A little bit goes a long way!

Technically confectioner’s sugar isn’t Paleo.  In this recipe, it’s not necessary; it just acts as a fun and festive garnish. For my Paleo Powdered Maple Sugar, check out my Paleo Chocolate Crinkle Cookies!

How to Make

Step 1

First, add all ingredients to a large mixing bowl or KitchenAid and mix until dough is formed.

Next, form dough into a ball and wrap in plastic wrap.  Refrigerate for at least 20 minutes.

Step 2

Remove dough from fridge and preheat oven to 350 degrees Fahrenheit.  Then, line a baking sheet with parchment paper.

Place dough between two sheets of parchment paper and use a rolling pin to roll dough out to ½ inch thickness.

Step 3

Remove top sheet of parchment paper.  Using cookie cut outs, cut out dough.  Place cookies on baking sheet.

Continue this process until the dough is used up.

Step 4

Next, bake for 6 to 8 minutes, depending on size and shape of cookies.

Step 5

Remove pan from oven and allow cookies to cool on baking sheet for 3 minutes before carefully transferring them to a cooling rack.

Step 6

Finally, once cooled completely, dust with confectioner’s sugar if desired.

Expert Tips & Tricks

Mix cookie dough together until no clumps of butter remain.

The key to the perfect cut out sugar cookies is having the right dough consistency.  Once the dough has refrigerated, it should be completely bound together.  This allows the cookies to be cut out and transferred easily to the baking sheet.

Roll out the dough to about ½ inch thick. Any thinner will yield crispy cookies.

For best results, cut out cookies into similar sizes. Larger and smaller cookies need different baking times.

These cookies are slightly fragile after baking. Handle carefully.

Flavor Variations & Add Ins

The topping options are endless for these Paleo sugar cookies.

Confectioner’s sugar, frostings and icing are all great ideas.

Add in a drop of almond extract or lemon extract to the batter.

Add in sprinkles.

Top with frosting and crushed nuts.

Top with a layer of melted chocolate.

Are these cookies buttery?

Yes, just like traditional sugar cookies, these are buttery and sweet.

Can I make them dairy free?

I have not tried using coconut oil or dairy free butter. I imagine dairy free butter would be the better option.

Can I cut them into any shapes?

Yes! I suggest making the cookies at least 2 inches wide though. Anything smaller may bake too quickly.
