Ingredients & Substitutions

Making puff pastry dough requires a certain formula. Therefore, I do not recommend making any substitutions.

Very cold butter is key for this dough texture. It helps bind the dough together. Slice butter straight from the fridge into small cubes. I do not recommend a dairy free or Vegan substitute.

Gluten free 1 to 1 flour works well for this dough. If you are not gluten free, all purpose flour works too. Use a gluten free flour blend that contains xantham gum.

A little salt adds a little something extra to this dough. If using salted butter, feel free to add just a pinch of salt.

Very cold water helps smooth out this dough. To achieve very cold water, I suggest placing an ice cube in a cup of water. Then, discard ice cube and measure out 1/4 cup before pouring into food processor. This guarantees cold water.

The egg wash makes the edges of the pastries even more golden and crispy. I do not recommend skipping this step. If using a sweet filling, feel free to sprinkle a little granulated sugar on top of egg wash before baking.

This gluten free puff pastry has a strong buttery flavor. The biggest flavor will be whatever you fill or top it with. In this case, jelly and dark chocolate.

The texture is flaky and light with several little layers of dough.

What is Puff Pastry?

Puff pastry is a flaky pastry. It is made from dough and butter. Typically, butter is placed inside the dough which is then continuously folded. Then, the dough is rolled out. This creates flaky layers.

There are small gaps which form between the layers from the butter. These gaps are rise while baking thanks to the water turning to steam. Puff pastry is flaky and light.

How to Make

Step 1

First, add cubes of cold butter, gluten free flour and salt to a food processor. Pulse 4 to 5 times until crumbly.

Step 2

Then add in cold water. Pulse another 4 to 5 times or until mixture is very crumbly.

Lightly flour countertop and rolling pin. Pour crumbles of dough onto floured surface. Use hands to form one big ball of dough.

Step 4

Use rolling pin to roll dough out to a rectangle that is ¼ to ½ inch thick. Fold the dough in half. Then fold it in half again.

Step 5

Wrap dough and refrigerate for 2 hours.

Step 6

Remove dough from fridge. Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper.

Step 7

Allow dough to sit at room temperature for about 20 minutes. Roll out dough on floured surface with floured rolling pin. If dough breaks, allow it to sit at room temperature for another 10 minutes or so.

Roll dough out to a large rectangle. Slice into desired shapes (I did smaller rectangles). Place on parchment lined pan.

Add desired filling/toppings. Leave about ½ inch along the edges for the egg wash.

To make egg wash, whisk egg in a small bowl. Brush onto edges of your little pastries. Feel free to sprinkle a little granulated sugar on top of egg wash if desired.

Step 11

Bake for 16 to 18 minutes, depending on how large your shapes are. Bake until edges are golden crispy.

Finally, remove from oven. Allow pastries to cool for 10 minutes before serving.

Expert Tips & Tricks

For best results, do not make any changes to the recipe.

Use very cold butter and very cold water.

When working with the dough, sprinkle some additional gluten free flour on your countertop and rolling pin. This prevents sticking.

After the dough has chilled, allow it to warm up a bit before rolling. It usually takes about 20 to 30 minutes for then dough to become rollable. If you try rolling and the dough immediately breaks, allow it rest longer.

To slice dough into smaller pastries, use a pizza cutter for best results.

If dough breaks at any point, use fingers to repair dough.

Notes

  • I used King Arthur Flour 1 to 1 gluten free flour and had great results.  I do not recommend another type of flour (almond, coconut, etc.).  All purpose flour can be used if not gluten free.
  • Use very cold butter straight from the fridge.  
  • For the cold water, I like to add about ¼ cup water and ice cubes to a measuring cup.  Then, remove ice cubes before measuring out ¼ cup water.  This ensures water is very cold.
  • After chilling the dough, if it is breaking apart while rolling, allow it to sit at room temperature for 10 more minuets.  Dough will be easily rolled out once it is at the right temperature.
