Say no to boring salads and hello to this Whole30 Brussels Sprouts Salad!  This salad has chopped Brussels sprouts, a little sweetness, a little savory flavor, and so many great textures.  It’s great for a side salad, light lunch or dinner with added protein.  The homemade apple cider vinaigrette adds a punch of sweetness and flavor!

LIST OF INGREDIENTS

BRUSSELS SPROUTS: Brussels sprouts are the star of the show here, but don’t be alarmed if they’re not your thing.  These Brussels are chopped finely and then topped with a myriad of flavors and toppings.

BACON: Extra crispy bacon is my favorite salad topping.  It adds a crispy texture and hearty flavor.  Here is my favorite bacon!  Make sure bacon is sugar free for Whole30.

APPLE: Just one sliced apple adds natural sweetness and crunch.

PECANS AND ALMONDS:  Goodbye croutons!  Pecans and sliced almonds act as the perfect garnish.

DRIED CRANBERRIES: Dried cranberries add the right amount of sweetness.  Be sure to use sugar free for Whole30.

DRESSING: This apple cider vinaigrette is incredibly easy.  It’s sweet and savory perfection!

WHOLE30 LUNCH OR DINNER

Meal prep is key for a successful Whole30.  This Brussels sprouts salad is great for lunches and dinners (or even breakfast!) and can be topped with animal protein for a hearty meal.  If making ahead of time, store salad and dressing separately until it’s time to eat. HOW TO MAKE WHOLE30 BRUSSELS SPROUTS SALAD

First, in a large skillet cook bacon until crispy.  Cut bacon into small pieces.

Next, remove stems and chop Brussels sprouts until finely chopped.

Slice apple into pieces.

To make the dressing, add all ingredients to a small bowl and stir to combine.

Finally, arrange salad: add Brussels, apple, bacon, pecans, almonds and dried cranberries in a large bowl. 

Lastly, toss salad with dressing.
