Brussels sprouts are my favorite vegetable, hands down.  I know this isn’t a very popular opinion, but I love them in any way, shape or form.  To make these appeal to more of the masses, I roasted these with some bacon.  I’m convinced bacon makes everything better!  In order to achieve maximum crisp factor, I roasted the Brussels in the oven then finished them off in a skillet with the bacon and bacon fat.  The result is an extremely hearty and flavorful side dish!

Cook Time: 15-20 minutes
Total Time: 20-25 minutes

Servings: 4 servings

 

Ingredients:

4 pieces of bacon

3 cups Brussels sprouts

1 TBL olive oil

Directions:

Preheat oven to 400 degrees and line a baking sheet with parchment paper.

Toss Brussels with olive oil (add sea salt if desired) and place on baking sheet.  Bake for 20 minutes, turning once halfway through.

Add bacon to a large skillet over low heat.  Cook for 5 or so minutes, flipping bacon several times.

Add in Brussels sprouts and continue cooking for 5 minutes.

Remove from heat.  Enjoy!
