Ingredients & Substitutions
The Chex mix are the perfect cereal for these Vegan muddy buddies. Rice Chex mix or corn Chex mix are both gluten free and work well.
Peanut butter is the best nut butter for this recipe in my opinion. Use a creamy smooth peanut butter that contains only peanuts and salt. If needed, creamy almond butter or cashew butter can be substituted. For a nut free option, use sunflower butter.
Any Vegan chocolate that melts well will work. I use Enjoy Life dark chocolate chips because they melt well and taste great!
Coconut oil is used in place of butter to keep this recipe Vegan. If desired, use Vegan butter.
Vanilla extract adds just the right amount of flavor. It can be omitted if needed.
Powdered sugar adds sweetness! Double check labels to ensure powdered sugar is Vegan.
How to Make
Step 1
First, add peanut butter, chocolate chips, coconut oil and vanilla extract to a microwave safe bowl. Melt in 30 second increments, stopping to stir between each. Melt until smooth and creamy.
Step 2
Add Chex mix cereal to a large bowl. Pour melted chocolate over cereal.
Step 3
Then, gently stir until cereal is completely coated in chocolate.
Step 4
Add powdered sugar to a large Ziplock bag.
Step 5
Add coated cereal to bag. Close bag and shake until cereal is covered in powdered sugar.
Step 6
Finally, add to a bowl and serve!
Expert Tips & Tricks
Use smooth creamy peanut butter that is made with only peanuts and salt. Thicker peanut butter will alter this recipe.
Completely melt peanut butter with chocolate chips, coconut oil and vanilla extract. Continue microwaving and stirring until smooth.
Fully coat Chex mix in chocolate mixture. Then, shake Ziplock bag until coated cereal is completely covered in powdered sugar.
Store in an airtight container at room temperature or in the fridge.

Hi, Chex Mix is not vegan at all and neither are any of the other proposed cereals youβre writing about.Β
Love this idea, but sadly the Vitamin D3 in most cereal is from lanolin.
