This gluten free bread flour replicates the flavor and texture of traditional wheat flour. King Arthur gluten free bread flour is made with wheat so please be aware of that.
Granulated sugar adds sweetness.
Instant yeast helps the dough rise and become soft and fluffy.
Add in a little salt to balance out the sweetness.
Baking powder allows the dough to rise.
Use cream or whole milk.
Lukewarm water helps activate the yeast. It should be about 110 degrees Fahrenheit.
Eggs help bind the dough together.
Coat the pan with melted unsalted butter.
Roll the dough balls in melted butter then cinnamon sugar. This helps them become buttery and sweet!
To make the glaze, combined powdered sugar and milk. Any type of milk works.

How to Make
Step 1
First, make the dough. In the bowl of a stand mixer, add the gluten free bread flour, granualted sugar, instant yeast, salt, and baking powder. Stir together.
Step 2
Then, add in the cream, lukewarm water, and eggs. Stir until a thick and sticky dough forms.
Step 3
Scrape down the sides of the bowl with a spatula and form the dough into a ball. Place a kitchen towel over the bowl. Let it rise for 1 hour until it has almost doubled in size.
Step 4
Preheat your oven to 350 degrees Fahrenheit. Generously spray a Bundt pan with nonstick spray. Pour 2 tablespoons of melted butter into the bottom of the pan.
Step 5
In a shallow bowl, combine the sugar and cinnamon. Pour 4 tablespoons of melted butter in another shallow bowl.
Step 6
Using your hands, roll the dough into 1 inch sized balls. Gently coat in a little melted butter, then roll in the cinnamon sugar.
Step 7
Place inside the Bundt pan. Repeat for all of the dough. Pour the leftover melted butter over the top of everything.
Step 8
Bake for 45 minutes, or until the dough has puffed up.
Step 9
Finally, remove the pan from the oven. Allow the gluten free monkey bread to cool in the pan for 7 to 8 minutes.
Step 10
While cooling, combine the powdered sugar and milk in a bowl. Stir until creamy.
Step 11
Finally, invert the gluten free monkey bread onto a serving plate. Immediately glaze and serve!

I have only tested this recipe using gluten free bread flour. I do not recommend using regular gluten free flour.
Overmixing can lead to a tough monkey bread. Mix until the ingredients are just combined.
Allow the dough to rise for an hour. This will ensure your monkey bread is light and fluffy.
Generously coat the dough balls in cinnamon sugar. This will give your monkey bread plenty of flavor.
Invert the pan about 7 to 8 minutes after baking. This will help prevent the monkey bread from sticking to the pan.
If the glaze is too thin, add slightly more powdered sugar. If the glaze is too thick, add slightly more milk.

- If you are wheat free, do NOT make this recipe or consume this flour.
- The dough will grow, but may not double in size completely.
- Use fresh yeast and not expired yeast.
- The dough will be a little sticky.
- Roll dough into 1 inch balls.
- This recipe is done when the dough balls have puffed up.
