Ingredients & Substitutions
These are the main ingredients and substitutions for gluten free bagels. Scroll down to the recipe card for full ingredients list and instructions.
Use unsweetened Greek yogurt. Any flavorings will dramatically alter the taste. Use a thicker variety of yogurt. Do not use runny yogurt. I have not tried using dairy free yogurt yet.
Use gluten free 1 to 1 flour. I have not tried another flour.
A little baking powder helps these bagels rise slightly.
Add in a pinch of sea salt if desired.
Spray bagels with nonstick spray before baking. Avocado oil and coconut oil are great options. Alternatively, brush with egg wash before baking. This helps the bagels become crispy on the outside.
Taste & Texture
These gluten free bagels taste like authentic bagels. Be sure to use unsweetened yogurt to not alter the taste. If using toppings, bagel will taste like the toppings. Watch out NYC, these bagels are legit.
The texture is spot on. These bagels have that signature chewy texture. They are golden on the outside and soft and chewy inside. They are not dry or bland.
How to Make
Step 1
First, preheat oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper.
Step 2
In a mixing bowl, add Greek yogurt, gluten free flour, baking powder and sea salt. Stir to form a dough. Dough should resemble pizza dough.
Step 3
Lightly flour hands and surface. Roll dough into a ball. Then, press into a disc shape.
Step 4
Use a sharp lightly floured knife to slice into 8 equal servings. This recipe makes 8 mini bagels or 4 regular sized ones.
Step 5
Roll each slice into a small ball. Press into a disc.
Step 6
Poke a hole in the middle with your finger. Gently stretch and pull dough until the hole is almost 1 inch in size.
Step 7
Repeat for dough. Place on the lined baking sheet.
Step 8
Spray generously with nonstick spray. Or, whisk an egg and brush on top of bagels.
Step 9
Bake for 25 to 27 minutes or until golden brown on top. Do not burn.
Step 10
Finally, remove from oven. Allow gluten free bagels to cool for 10 minutes before slicing, serving or toasting.

For best results, use unsweetened Greek yogurt. Use a brand that is thick. Do not use runny yogurt.
Additionally, use gluten free 1 to 1 flour. The only perfect substitute is all purpose flour, which is not gluten free.
Mix dough until it resembles pizza dough.
Lightly flour hands, working surface and knife before working with dough. This prevents sticking.
Cut dough into equal sized shapes.
Use hands to form donuts.
Spray heavily with nonstick spray before baking. Otherwise, the bagels will not turn golden on the outside.

Consider these toppings and flavor variations.
Sprinkle on everything bagel seasoning before baking.
Add cinnamon and raisins to the dough.
Add mini chocolate chips to the bagel dough.
Sprinkle sesame seeds on top.
Top gluten free bagels with cream cheese, peanut butter, jelly, jam or Nutella.

- The dough will be slightly sticky and similar to pizza dough.
- Lightly flour your hands, the knife and surface you are working on. This prevents sticking.
- These bagels will not look perfect. That is totally fine!
- For larger bagels, divide dough into 4 larger pieces. You will need to add more baking time.
- Heavily spray with nonstick spray. Or, use an egg wash. These methods both yield golden bagels.
- Feel free to use seasonings on top before baking. Everything Bagel seasoning is a great option.
- Store bagels covered at room temperature for up to 2 days.
- Freeze for up to 1 month.

I feel strange asking this question, but…can these bagels be made with regular flour instead of GF? We have no gluten issues in my home, but I love the idea of this recipe and would love to try it with my standard AP flour. Thanks for your thoughts!
