Ingredients & Substitutes
These are the main ingredients and substitutions for these Funfetti sugar cookies. Scroll down to the recipe card for full ingredients list and instructions.
Use softened unsalted butter for the best texture. Set the butter on your kitchen counter about one hour before baking. It should be soft to the touch but not melted. If you only have salted butter, then omit the salt later on.
Granulated sugar adds the sweetness.
Two eggs help bind the cookies together. For an egg-free option, replace the 2 eggs with ½ cup unsweetened applesauce.
Vanilla extract adds a warm and cozy flavor.
For the flour, use gluten free 1 to 1 flour if you are gluten free. I highly recommend King Arthur Flour or Bob’s Red Mill. If not, all-purpose flour works fine.
Baking powder helps leaven these cookies.
Add in a pinch of salt to balance out the sweetness.
Lastly, use rainbow sprinkles for extra fun! Be sure to use gluten free sprinkles.

How to Make
Step 1
First, preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or silicone baking mat and set aside.
Step 2
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy using an electric mixer.
Step 3
Add the eggs and vanilla. Beat to combine.
Step 4
In a separate bowl, whisk together the flour (gluten free or regular), baking powder, and salt.
Step 5
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Step 6
Gently fold in the rainbow sprinkles, ensuring they are evenly distributed throughout the dough.
Step 7
Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. If desired, lightly press a few extra sprinkles onto the tops of the cookies for decoration.
Step 8
Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden. The centers may still appear slightly soft, but they will firm up as they cool.
Step 9
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Step 10
Once cooled, store the Funfetti cookies in an airtight container at room temperature.

Do you ever make these into bars? If so, what do you do different?
Hi Dana! I haven’t tried that yet, but I imagine it would work. I would line an 8 inch square pan with parchment paper. Press the dough into the prepared pan. Bake for 25 to 30 minutes or so at 350 degrees Fahrenheit. Enjoy!
