I love using my slow cooker year round but especially in the fall and winter.  Now that it’s September I’ll be using it quite often.  This Whole30 White Chicken Chili recipe is filled with hearty and savory flavors.  I used chicken thighs because they never dry out but chicken breast would work fine too.  This chili is filled with chunks of chicken, potatoes, onions, and spices.  Just add the ingredients to your slow cooker and let it do all the work for you!  A bowl of this chili is so warm and cozy, and the perfect accompaniment to any chilly night.

3 lbs chicken thighs
3 large potatoes, cut up into bite sized pieces
1/2 large onion, cut up
2 tsp garlic
2 cups chicken broth
1/2 tsp sea salt
2 tsp ground pepper
2 tsp oregano
2 tsp chili powder
2 tsp paprika
1-2 TBL cumin (depending on your preference)
1 tsp onion powder
Jalapenos, to garnish
Avocado, to garnish


Add chicken to your slow cooker.  Top chicken with the remaining ingredients and spices.

Cook on low 7-8 hours or high 3-4 hours.

About 10 minutes before eating, shred chicken with two forks.

Garnish with avocado and jalapeno if desired.
