I love pulled pork.  It’s always been one of my favorite things to have for dinner and if a restaurant menu has it, I don’t even explore other options.  It’s what I’m going to order every single time.  I’m also a huge fan of any and all things sweet potatoes so I decided to combine the two and made pulled pork over sweet potatoes.  They remind me of nachos, but the sweet potatoes take the flavor and texture up a notch.  My whole family loved these!

Cook Time: 45 minutes
Total Time: 55 minutes

Servings: 8

 

Ingredients:

2 cups pulled pork
2 large sweet potatoes, cut into rounds
2 TBL coconut oil, melted
1 bottle BBQ sauce (I use The New Primal to keep it sugar free!)
Red onion to garnish
Basil to garnish
Guacamole (optional)

Directions:

Preheat oven to 400 degrees.  Slice sweet potatoes into rounds.  Coat with melted coconut oil.

Bake for 40 minutes, flipping after 20 minutes.

Assemble: top sweet potatoes with pulled pork, onions, basil and guacamole.
