Since I oftentimes make a big batch of pulled pork on Sunday afternoons to have throughout the week, I’m always looking for new ways to eat it.  It’s no surprise that I also love sweet potatoes so I decided to make these pulled pork sweet potato sliders.  They’re as delicious as they are adorable.  They’d be perfect to bring as an appetizer to a gathering (but I typically eat 4-5 as a dinner!)  This is such an easy meal to make ahead and then just assemble when it’s time to eat.  Here I topped them with some homemade guacamole which was a nice creamy complement to the pork.  Enjoy!

Ingredients:

2-3 cups pulled pork (here is my slow cooker recipe and here is my Instant Pot recipe)
1 cup Whole30 BBQ sauce
2 sweet potatoes cut into rounds
2 TBL coconut oil, melted
Homemade guacomole to garnish

Directions:

Preheat oven to 400 degrees.  Place sweet potatoes on a cookie sheet and coat with melted coconut oil on both sides.

Bake for 20 minutes each side (40 minutes total).

Assemble: place pulled pork on top of sweet potatoes, add some BBQ sauce then some guacamole if desired.
