(WHOLE30, GLUTEN FREE, DAIRY FREE, PALEO, KETO-FRIENDLY)

The other night I had a weird craving for a Cobb salad so I ordered one while out to dinner.  As soon as I came home, I knew I’d be making a Cobb salad the very next night for dinner.  It was that delicious!  This version is classic; it has the hard boiled eggs, crumbled bacon, cherry tomatoes, and creamy avocado.  I left out the blue cheese since I don’t like it, but feel free to add it in.  I like to chop everything up before eating it so the creamy avocado often acts as my “dressing” of choice.  I think some balsamic vinaigrette or olive oil drizzled on top would be delicious too!

Ingredients:

2 cups mixed greens
2 eggs, hard boiled
1 avocado
1 cup cherry tomatoes, cut in half
4 pieces no sugar bacon, crumbled (I use Jones Dairy Farm)
Pepper to taste
Basil for garnish

Directions:

Assemble salad: top mixed greens with crumbled bacon, chopped tomatoes, hard boiled eggs and sliced avocado.

Sprinkle with basil and pepper if desired.
