I am always coming up with new ways to eat pulled pork.  It’s good for any meal of the day and this particular recipe is one of my favorites for a cozy fall dinner.  I love how the sweetness of the cinnamon apples balances out the savory flavors of the BBQ pulled pork.  These sliders would make a great appetizer for game days and get togethers, and also a delicious dinner.  If you love the flavors of fall (who doesn’t?) then you’re sure to love this recipe!

Ingredients:

2-3 cups pulled pork (here is my slow cooker recipe and here is my Instant Pot recipe)
1 cup Whole30 BBQ sauce
2 sweet potatoes cut into rounds
2 TBL coconut oil, melted
2 large apples, seeded and chopped into 1/2″ pieces
1 TBL cinnamon
2 TBL coconut oil

Directions:

Preheat oven to 400 degrees.  Place sweet potatoes on a cookie sheet and coat with melted coconut oil on both sides.

Bake for 20 minutes each side (40 minutes total).

While sweet potatoes are baking, add apples, cinnamon, and remaining 2 TBL coconut oil to a large skillet over low/medium.  Allow apples to simmer for about 10 minutes, until soft.

Assemble: place pulled pork on top of sweet potatoes, add some BBQ sauce then top with cinnamon apples.
