Zucchini noodles are an easy way to add extra vegetables to your diet without feeling like you’re doing so.  I buy mine already spiralized and frozen, so I just boil mine for a few minutes and they are ready to go.  Super quick and easy for a weeknight dinner!  I added some olive oil, grilled chicken and bacon to this dish and the result was a hearty and savory flavor combo.  I’ve found that zucchini noodles truly taste like whatever they’re paired with; I’m not the biggest roasted zucchini fan but these noodles have become one of my favorite things to make recently.  You’ll love how quick and easy this healthy dinner is!

Ingredients:

2 boxes frozen zucchini noodles (I buy mine from Trader Joe’s)
2 large chicken breasts
5-6 pieces of bacon (sugar free for Whole30)
2 TBL olive oil
1 cup spinach
Basil, to garnish

Directions:

Allow zucchini noodles to thaw, or boil them for 3-4 minutes so they are not frozen.

Add bacon to a skillet over medium low.  Cook for 4-5 minutes or until crispy then remove from pan.  Keep bacon fat in pan.

Add chicken to the same skillet over medium low.  Once browned on all sides (about 4-5 minutes each side), add in zucchini noodles.

Let this cook for about 5-10 minutes together on low.

Just before serving, add spinach and bacon back to the pan.  Drizzle with olive oil and finally garnish with basil if desired.
