These are so much fun to make and come together in a pinch!  They’re equally as fun to eat. I love making these around the holidays to bring to a party but they’re delicious year-round.  I made the caramel layer just using dates and water and it was so tasty. I love dark chocolate so that is the top layer, but any type of chocolate would work here.  These come together in minutes and with only a handful of ingredients. Enjoy!

Ingredients:

36 pecans
½ cup of dates
3 TBL water
1 cup dark chocolate chips
Sea salt for sprinkling

 

Directions:

Let your dates soak in a glass of water for a few minutes then drain water.  Add dates and fresh 3 TBL water to a blender or food processor and blend for 30-45 seconds.  

Line cookie sheet with parchment paper and assemble 3 pecans in a little triangle.  Do this 11 more times to give you 12 little pecan triangles total.

Melt chocolate in microwave, stirring every 30 seconds until melted.

Spoon a little bit of date caramel on top of each pecan triangle.  Then, spoon a little bit of chocolate on top of caramel.

Sprinkle sea salt on top.  Freeze for 30 minutes.
