If you’re looking for an easy and quick Whole30 meal, look no further!  This Whole30 Chicken Egg Roll in a Bowl requires only a handful of ingredients and comes together quickly!  It might be simple, but this recipe packs quite the flavor punch.  I also love that it combines hearty proteins and several vegetables.  It’s as healthy and it is delicious!  It makes a flavorful lunch, tasty dinner, and the leftovers are great.  Meal prep this on a Sunday night and you’ll be eating all week!

1.5 lbs chicken breast, cubed into 1 inch pieces
2 TBL olive oil
3 cups chopped greens/veggies (I used lettuce, cabbage and carrots)
1/4 cup coconut aminos
1 TBL ground ginger
1 TBL minced garlic


In a skillet over medium heat, add olive oil and chicken over medium heat.  Cook 3-4 minutes on each side or until chicken is cooked through.

Once cooked, add remaining ingredients, stirring to combine.

Let simmer for 5-10 minutes.  I prefer my veggies a little firmer here so I only do about 5 minutes.


Note: I garnish mine with a Whole30 buffalo mayo: just mix equal parts Whole30 Mayo and hot sauce!
