These Whole30 Vegan Asian Sesame Noodles are bursting with sweet and savory flavors.  Spiral butternut squash and zucchini noodles provide a healthy and delicious “noodles” base.  I love eating veggies this way since you don’t realize that you’re eating vegetables!  Plus, these noodles taste like whatever sauce you pair with them.  In this case, it’s a flavorful Asian sesame sauce.  This one has a subtle ginger lime flavor which really elevates the dish.  These Asian Sesame Noodles make the perfect side dish, quick meal, or hearty appetizer.

Ingredients:

3 cups spiral veggie noodles (I used butternut squash and zucchini noodles)
2 TBL olive oil
1/4 cup Whole30 Ginger Lime Coconut Aminos
1 TBL ground ginger
1 TBL minced garlic
1 TBL sesame seeds, to garnish
Lime, to garnish

Directions:

In a skillet over medium heat, add olive oil, veggie noodles and garlic.  Cook for 4-5 minutes, until noodles are soft.

In a small bowl, mix coconut aminos and ginger.  Pour over veggie noodles.  Turn up heat until a small boil is reached.

Once boiling, turn down heat and let simmer for 3-4 minutes.

Garnish with sesame seeds and lime if desired.
