(WHOLE30, GLUTEN FREE, DAIRY FREE, PALEO, KETO-FRIENDLY)

Now that I’ve discovered my love for Primal Kitchen Whole30 Mayo, there is no stopping me!  I feel like I’m making up for lost time with all the different chicken salad combinations I’ve been making.  My favorite add-ins are some fruit and some sort of nut.  For this one, I chose blueberries and pecans for some sweetness and some crunch.  The combo turned out to be absolutely delicious!  This chicken salad only requires one bowl and comes together in minutes.  Enjoy!

Ingredients:

2 chicken breasts, cooked
1/2 cup Whole30 mayo
2/3 cup blueberries
1/4 cup pecans, chopped if desired
4 pieces cabbage
Salt and pepper to taste

Directions:

Add all ingredients to a mixing bowl except cabbage.  Mix until everything is coated in mayonnaise.

Serve mixture over cabbage.  Sprinkle with salt and pepper if desired.
