WHOLE30 BACON WRAPPED CHICKEN THIGHS
(WHOLE30, GRAIN FREE, GLUTEN FREE, DAIRY FREE, PALEO)
I’m combining two of my favorite foods for a flavorful and protein packed dinner! These Whole30 Bacon Wrapped Chicken Thighs are hearty and savory. I wrap the chicken thighs in bacon and sear them in a skillet before baking them. This really helps the bacon get crispy. In order to keep these Whole30, I used sugar free bacon. The brand that I use and love is Naked Bacon. Serve these chicken thighs with your favorite roasted veggies, some cauliflower rice, or sweet potatoes. The possibilities are endless!

Ingredients:
1.5 lbs chicken thighs
2 TBL olive oil
8 slices sugar free bacon (use code ORGANICALLYADDISON for a free order of bacon on every order!)
1 tsp onion powder
1 tsp black pepper
1 tsp garlic powder
Directions:
Preheat oven to 400 degrees.
Pat chicken thighs dry with paper towel. Mix seasonings in a small bowl and rub over chicken thighs.
Heat olive oil in a skillet over medium. Wrap one piece of bacon around each chicken thigh. Sear chicken for 4-5 minutes on each side.
Remove from heat and transfer chicken to nonstick baking sheet. Bake for 30-35 minutes or until chicken is cooked through.
Serve with your favorite sides!

Great recipe! I used brussel sprouts (because I didn’t have green beans and who doesn’t love brussel sprouts cooked in bacon fat?!), purple carrots, and red onions for the veggies. After browning the chicken wrapped bacon in olive oil, I drained some of the fat and then sauteed the veggie mix in the fat. I put the veggie mix in the middle of the pan, the chicken on the perimeter, and roasted at the recommended temp. It was delicious! Thank you for the inspiration! Also, I live in Kittery and told my coach at the crossfit gym in York that I am a total “fan girl” of yours!
