(WHOLE30, GRAIN FREE, GLUTEN FREE, DAIRY FREE, PALEO, KETO FRIENDLY)

Tacos are one of my favorite foods; they’re filled with so many spicy and warm flavors.  This Taco Casserole has the flavors of a taco and the cozy factor of a comfort food dish.  I added sweet potatoes for some added flavor and color.  I used an egg and some salsa to bind this casserole together while cooking but when serving, it gets all crumbly and delicious!  I served mine over lettuce but this would be great over cauliflower rice too.  It’s great along or with a side dish.  Enjoy this one!

Ingredients:

1.5 pounds ground hamburger
1/4 cup onion, chopped
1/4 cup red onion, chopped
1 cup cubed sweet potatoes
1 tsp olive oil
2 TBL taco seasoning (this one is Whole30)
1/2 cup salsa
1 egg
Jalapeno, to garnish
Lettuce, to garnish
Avocado, to garnish

Directions:

Preheat oven to 400 degrees.

Brown hamburger in a skillet over medium heat.  Once browned, drain excess fat.

Add in onion,red pepper, sweet potatoes and olive oil.  Sauté on medium for 4-5 minutes.

Remove from heat and empty all contents into a large mixing bowl.  Add in salsa and whisked egg. Stir to combine.

Add mixture to an oven safe dish (I used an 8×6 pan).  Bake for 45-50 minutes or until edges are bubbly and sweet potatoes soft.
