Warm and hearty soup in the winter is my favorite.  There’s just something about the cozy flavors that gets me every time.  I always add a savory protein to my soups to give them some added flavor and to make them more of a meal.  This Whole30 Sausage Potato Kale soup couldn’t be easier.  It’s made with just a handful of ingredients and comes together easily.  It’s rich and creamy, two of my favorite soup qualities.  It can be done on the stovetop, in the slow cooker or the Instant Pot.  I love that it’s just as delicious as it is filling.  Keep the leftovers for some extra creamy and delicious soup!

Ingredients:

1.5 lbs sausage (sugar free, I used Pederson’s)
2 cups (3 or 4 medium) red potatoes, chopped
4 cups chicken broth
1 cup baby kale
2 TBL olive oil
3 TBL coconut milk full fat
Red pepper flakes, to garnish

Directions:

Brown sausage in a large skillet with olive oil, 2-3 minutes per side.

Once browned, add in potatoes and chicken broth.  Bring to a light boil and boil for 10 minutes.  Lower heat to low and add in kale; allow to cook for 2-3 minutes.

Add in full fat coconut milk and stir to combine.  Allow to simmer for at least 10-15 minutes up to 30 minutes.

Once creamy, garnish with red pepper flakes if desired.
