I knew it was only a matter of time before I fell in love with my Instant Pot… and it happened.  This chicken stew (which would take hours and hours in my beloved slow cooker) was done in less than 30 minutes.  The Instant Pot is still somewhat of a mystery to me but I’ll never question its abilities again.  I basically dumped all the ingredients in, let it pressure cook, then let the stew sauté for a few more minutes while I added in some tapioca flour and water to let it thicken.  If I didn’t add in this thickener then it would’ve made the most delicious chicken soup!  This is the perfect weeknight dinner since it comes together so quickly, but would also make a great meal prep lunch or dinner since the leftovers were even better.

Ingredients:

2-3 large uncooked chicken breasts (about 2.5 pounds)
4-5 large carrots, chopped
1/2 cup chopped onion
5-6 small red potatoes, cut in fourths
1 cup sugar free chicken broth
1 TBL olive oil
1 TBL apple cider vinegar (optional)
1 tsp thyme
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
3 TBL tapioca flour
3 TBL water

 

Directions:

Add in the following order to your Instant Pot: chicken broth, uncooked chicken breasts, carrots, onions, potatoes, olive oil, apple cider vinegar (optional- just adds some flavor), thyme, pepper, garlic powder, onion powder.

Turn Instant Pot to pressure cook and set time to 12 minutes; turn top vent to sealing.  It’ll take about 10-15 minutes for your Instant Pot to reach pressure then the timer will start to count down from 12 minutes to 0.

When timer goes off, allow to sit for 10 minutes for a natural release.  After 10 minutes, turn top vent to venting while using an oven mitt to avoid burning yourself.  Once the pressure is fully released, take off top lid and press Sauté.  Set the timer for 10 minutes.

In a small bowl, mix tapioca flour and water.  Add to Instant Pot and stir.  Continue to stir for remaining time.

After timer goes off, serve immediately.  Also great as leftovers.
