Use any type of popcorn. From my own experience, choose unflavored or salty popcorn. Both store bought and homemade popcorn work well. Read more about Vegan Popcorn!

Butter helps melt the marshmallows. For dairy free, use dairy free butter.

Both mini and jumbo marshmallows work fine. I love Dandie’s vegan marshmallows for this recipe.

Vanilla extract adds a delicious homemade flavor.

How to Make

Step 1

First, line a 9 inch by 13 inch pan with parchment paper.

Step 2

Add butter to a stock pot over low medium heat. Once melted, add in the marshmallows and vanilla extract. Continue stirring and cooking until completely melted.

Step 3

Add in the popcorn. Stir until popcorn is completely coated. Add in half of the sprinkles and stir to combine.

Step 4

Transfer the mixture to the lined pan. Use a spatula to press down into one even layer.

Step 5

Drizzle melted chocolate and remaining sprinkles on top.

Notes

  • I recommend not using popcorn that is already too sweet.  The marshmallow coating will add additional sweetness.
  • For this recipe, I used almost a full 7 ounce bag of Smartfood popcorn.
  • The sprinkles and chocolate are totally optional.
  • Use parchment paper to help lift the bars out of the pan.
  • Store bars covered at room temperature for up to 2 days.  After that, the popcorn starts to become stale.
