If you’re looking for a super easy and versatile little recipe, then look no further!  These yogurt parfaits come together in just a few minutes and make the perfect breakfast, snack, or dessert.  They are filled with layers of creamy yogurt, fresh fruit and a crunchy granola topping.  They would also make for a fun and festive appetizer or party food: think Fourth of July, Memorial Day, etc.  Let’s start with the coconut yogurt base.  I love dairy free yogurt since it’s so light and delicious.  I typically choose a coconut milk based yogurt but I’ve also had success with a cashew based yogurt.  You can totally use your favorite yogurt here.  Next, we have the fresh fruit!  I like the tartness and sweetness of the raspberries and blueberries here but I don’t think you could go wrong with choosing another fruit.  Bananas, strawberries, blackberries and mango all sound tasty to me.  Probably my favorite part of these parfaits is the little bit of granola on top.  It just adds such a nice crunch.  I now make most of my granola at home but a store bought grain free granola is great too.  I absolutely swear by this brand.  The best part about these parfaits is that they’re totally customizable; switch up the fruit you use, which flavor yogurt you use, and the toppings are endless!  Some nuts, seeds, or chocolate chips would add some nice flavor and crunch here as well.  If you’re making these ahead of time, leave off the crunchy topping and store in the fridge.  Just before serving, add the topping.  This prevents it from getting soggy in the fridge.  I hope you enjoy these!

Ingredients:

1 cup coconut milk yogurt
1/2 cup raspberries
1/2 cup blueberries
1/3 cup Paleo granola (see my recipe here)
3 small jars

Directions:

Add a big spoonful of coconut yogurt to each jar.  Layer fruit on top.

Add another layer of coconut yogurt.  Top with granola.
