(GRAIN FREE, GLUTEN FREE, DAIRY FREE, PALEO)

One of my favorite foods is sweet potatoes.  They are so versatile and I love that they’re great in both sweet and savory dishes.  I love them mashed, in french fry form, or in a sweet potato casserole.  I decided to make them into these breakfast bars so that I could have them first thing in the morning.  They’re light, fluffy, cakey, and perfect for breakfast.  One bowl and about 20 minutes stand between you and these delicious sweet potato breakfast bars!

Cook Time: 16-19 minutes
Total Time: 21-24 minutes

Servings: 9 bars

 

Ingredients:

1 1/3 cup creamy cashew butter
2/3 cup mashed sweet potato, cooked
1 egg, room temperature
3 TBL pure maple syrup
1 tsp vanilla
1/2 tsp baking soda
1 tsp cinnamon
1 tsp pumpkin pie spice
Sprinkle nutmeg
1/2 cup dark chocolate chips

 

Directions:

Preheat oven to 350 degrees.

Line an 8×8 glass pan with parchment paper.

In a large mixing bowl, combine all ingredients except chocolate chips.  Mix until no lumps remain.

Gently fold in chocolate chips.

Bake for 16-19 minutes or until toothpick inserted comes out clean.  Mine were perfect at 17 minutes!
