Salads that are packed with flavor and toppings are my favorite.  This Arugula and Pear Salad is filled with different textures and flavors that complement each other perfectly.  Arugula and spinach are a tasty base, the pears are sweet and a little crunchy, the pomegranate seeds and dried cranberries provide the sweetness, and the walnuts add the right amount of crunch.  I served this with warmed up honey as my dressing.  To die for!

Servings: 4 servings

Ingredients:

3 cups arugula
3 cups spinach
1 large pear, sliced
1/4 cup pomegranate seeds
1/4 cup walnuts
1/4 cup dried cranberries
Honey, for dressing (about 1/4 cup but adjust for preference)

Directions:

Add arugula and spinach to a large salad bowl.  Add remaining ingredients on top.

I like to warm up honey and use this as my dressing.  Drizzle honey over salad.
