(WHOLE30, GRAIN FREE, GLUTEN FREE, DAIRY FREE, PALEO)

This Whole30 approved Taco Layer Dip looks fancy but is incredibly easy to make!  It’s sure to wow your friends and family!  It has recently become my favorite appetizer and go-to dish for any gathering.  It starts off with a base of guacamole (see my easy recipe here), then is topped with taco seasoned chicken, buffalo ranch sauce, salsa, and finally lettuce and jalapenos.  It’s creamy, spicy, and so delicious!  Make this for your next party and your guests will be amazed!

Ingredients:

Guacamole Layer:
2 avocados
1/4 cup onion, chopped finely
1 tsp minced garlic
1/2 tsp onion powder
1/2 tsp cumin
1 TBL lime juice
Cilantro, to garnish
Pinch sea salt

Chicken Layer:
1 cup shredded chicken
1 tsp olive oil
1 TBL taco seasoning (this one is Whole30)

Buffalo Ranch Layer:
1/2 cup Whole30 ranch
1/4 cup hot sauce

Remaining Layers:
1 cup salsa
1/2 cup lettuce
1 jalapeno, chopped

Directions:

Make the guacamole layer: remove flesh from avocados.  Add all ingredients to a bowl and combine.  Garnish with cilantro and sea salt if desired.

Add guacamole layer to the bottom of a dish (mine is about 8×6).  Combine chicken layer ingredients and top guacamole with chicken.

Combine ranch and hot sauce in a small bowl and then pour over chicken layer.

Pour salsa on top of ranch layer and garnish with lettuce and jalapeno.

Note: these are my favorite paleo chips!
