Burgers on the grill will forever be one of my favorite dinners, especially in the summer!  But pair a burger with a sweet potato bun and now you’re talking.  I will dare say… a sweet potato bun now trumps a gluten free bun in my book.  They just elevate the flavor of the burger so much.  I decided to top these sliders with some homemade guacamole (no surprise there) but feel free to add some caramelized onions, mushrooms, whatever your jam is.  These are super fun to make and eat!

Ingredients:

1 lbs ground hamburger
1 large sweet potato sliced into rounds (need 8 “buns” total)
1 TBL coconut oil
Homemade guacamole to garnish

Directions:

Preheat oven to 400 degrees.  Slice sweet potatoes into rounds. Coat both sides of each round with melted coconut oil.

Place sweet potato rounds on baking sheet and bake for 40 minutes (flipping after 20).

Meanwhile, make 4 small burgers.  Grill about 4-5 minutes each side or until no longer too pink.

Assemble: top sweet potato with burger and homemade guacamole.
