Blueberries have always been one of my favorite fruits.  I love eating them plain, in desserts, muffins, breads, and now I’m eating them with chicken!  I’m always looking for new and unique ways to dress up chicken.  This unexpected flavor combo works well!  The blueberries provide just enough sweetness to perfectly complement the savory chicken.  This sweet and savory sauce really elevates a simple grilled chicken breast.  It’s super easy but packed full of flavor.

We will first start by preheating a grill or indoor grill.  I love using my indoor grill since it’s oftentimes too cold or snowy to grill outside in Maine.  You could absolutely cook this chicken on a stovetop or in the oven, but I think grilling chicken just adds a nice smoky flavor.  Once the grill is preheated, grill chicken for about 5-6 minutes per side or until no longer pink in the middle.  You may have to grill slightly longer if your chicken is thick.  While the chicken is grilling, it’s time to make the sauce!  This blueberry BBQ sauce could not be any easier!  It’s made with only blueberries and Whole30 BBQ sauce.  Allow the blueberries to cook in a skillet over low heat until softened.  The blueberries will start to break down after a couple minutes.  I like to leave some of the blueberries in tact so that the sauce is chunky.  The longer you cook the blueberries, the more they break down; this leads to a thinner and more uniform sauce.  Add the BBQ sauce to the blueberries and you’re good to go!

This chicken comes together in under 30 minutes and requires just 3 ingredients.  It’s an easy weeknight dinner but could also be great for backyard BBQs, holidays, or entertaining with friends.  An easy, healthy and delicious meal that everyone will enjoy!

Ingredients:

4 chicken breasts
1/2 cup Whole30 BBQ sauce
1/4 cup fresh blueberries

Directions:

Preheat grill or indoor grill to 400 degrees.  Grill chicken for 5-6 minutes each side until no longer pink in the middle.  Depending on the thickness of the chicken, they may need longer.

Meanwhile, heat blueberries in a skillet over low until softened.  Mix in BBQ sauce to combine, leaving some blueberries chunky if desired.

Spread blueberry BBQ sauce over grilled chicken.

Serve!
