PALEO PANCAKE MIX MUFFINS
(GLUTEN FREE, DAIRY FREE, PALEO, VEGAN)
The other day I had a sudden craving for chocolate chip muffins. Growing up, I would eat one almost every morning for breakfast. I had some pancake mix on hand so I decided to combine two of my favorite breakfast foods into one and these muffins were born! They are the perfect quick and easy breakfast, a little treat, or an easy snack. Plus anything that has chocolate in it is bound to be a hit! These are delicious warm and cold. Enjoy!

Ingredients:
1.5 cups Birch Benders paleo pancake mix (or pancake mix of choice)
1 cup almond flour
1/6 cup coconut oil, melted
1 cup + 3 TBL almond milk
3 TBL pure maple syrup
Dash cinnamon
1 cup dark chocolate chips
Directions:
Preheat oven to 350 degrees. Line muffin pan with muffin liners. Combine all ingredients in a big mixing bowl, adding chocolate chips last.
Bake for 15-18 minutes or until toothpick inserted comes out clean.
