Cold butter provides the tasty buttery flavor. Use cold butter. Do not use melted or softened butter.
Granulated sugar adds sweetness. I do not recommend a sugar alternative.
Both one egg and one egg yolk help hold these cookies together. The extra egg yolk makes them more dense. For an egg free recipe, try these Pumpkin Sugar Cookies.
Vanilla extract adds a yummy homemade taste.
Both regular all purpose and gluten free flour work well. Alternative flours will alter the cookies.
Baking powder helps leaven them.
Add in a pinch of sea salt if using unsalted butter. Salt can be omitted, but adds a nice subtle flavor.
The spices add a warm flavor. Feel free to adjust amounts to suit your preference. For a stronger flavor, consider adding a pinch of espresso powder.
