Ingredients & Substitutions
There are only 4 ingredients in this recipe. They are each very important.
Use bright red fresh strawberries for best results. Do not use frozen berries. They will not maintain their shape.
White chocolate chips are the base of the pink coating. I used Vegan and dairy free white chocolate chips.
Coconut oil helps smooth out the white chocolate and harden the coating. Use refined coconut oil for a neutral flavor. Unrefined coconut oil has a slight coconut flavor. Butter is a common substitute for coconut oil, but I have not tried it with this recipe.
Red food coloring turns the white chocolate into pink chocolate. Use as much or as little as desired. The photos here were made with 2 drops.
How to Make Pink Chocolate
Pink chocolate is made with white chocolate chips and red food dye.
Once the white chocolate and coconut oil are melted together, add in drops of red food coloring. The more food coloring used, the deeper pink/red it will become.
For best results, start with only 1 drop of food coloring. Then mix and see how the color comes out. Add more food coloring if needed.
How to Make
Step 1
First, wash strawberries. Pat completely dry. Line a pan or large plate with parchment paper.
Step 2
In a microwave safe bowl, add white chocolate chips and coconut oil. Microwave for 30 seconds. Stop and stir until creamy. If needed, microwave another 10 to 15 seconds until mixture is entirely melted.
Step 3
Add 2 drops of red food coloring into melted white chocolate mixture. Stir until mixed. If needed, add more food coloring to reach desired color.
Step 4
Dip each strawberry almost fully into the pink chocolate mixture.
Step 5
Next, place each strawberry on parchment lined plate.
Step 6
Continue for all strawberries. Then, place plate in fridge to harden for 15 minutes.
Step 7
Finally, remove from fridge and serve!

Use ripe fresh strawberries for best results.
Use white chocolate chips that melt well.
The coconut oil is vital. It helps smooth out the white chocolate and helps harden the coating. Do not make these without coconut oil.
Fully melt white chocolate chips and coconut oil. Mix until smooth and creamy.
Allow the coating to harden fully.
These are best eaten within 24 hours.
