Treat yourself to these ultra-soft Banana Bread Brookies! They combine a fudgy dark cocoa brownie with a ripple of classic banana bread. Packed with chocolate chips, they are perfectly chewy, moist, and have a buttery, melt-in-your-mouth finish!

Banana Bread Batter

Instructions 

  • First, preheat your oven to 350 degrees Fahrenheit. Line an 8 inch by 8 inch square pan with parchment paper.
  • Make the brownie batter first. Add melted butter and 1 cup dark chocolate chips to a bowl. Stir until creamy and fully melted. If needed, microwave for 10 to 15 seconds. Set aside.
  • In a mixing bowl, add eggs and coconut sugar. Whisk vigorously for 2 to 3 minutes, until light and frothy.
  • Add the melted chocolate mixture to the mixing bowl. Stir to combine.
  • Then, add in dark cocoa powder, vanilla, flour and espresso powder. Stir to combine.
  • Fold in extra chocolate chips if desired.
  • Then, make the banana bread batter. Add all of the banana bread ingredients to a bowl. Stir to combine.
  • Then, use two cookie scoops to scoop alternating dough into the pan. Scoop the brownie batter, followed by a scoop of the banana bread batter, and so on.
  • Bake for 35 to 38 minutes, or until a toothpick inserted comes out with only a few moist crumbs.
  • Finally, remove from the oven. Allow to cool fully before slicing and serving.

Notes

  • If you are not gluten free, feel free to use all purpose flour.
  • Make sure to use ripe bananas.
  • If you don’t have coconut sugar, use maple sugar or light brown sugar.
  • To save time, feel free to use boxed brownie mix.
  • These bars will be very gooey! Allow them to cool before slicing into.
  • Store leftovers in an airtight container for up to 2 days at room temperature.
