Get the Recipe: No Bake Samoa Cookies

These no bake Samoa cookies are such a fun treat! They are inspired by the classic Girl Scout cookie, but they are both gluten free and vegan. This quick and easy recipe is no bake!

Ingredients

Instructions 

  • First, line a pan with parchment paper.
  • Add the pitted dates and coconut flakes to a food processor.
  • Process for 30 seconds, or until the mixture sticks together between your fingers.
  • Form the mixture into flat discs. Place on the lined pan.
  • Use the end of a wooden spoon to form a hole in the middle of each cookie.
  • Dip the bottom of each cookie in the melted chocolate. Place on the pan. Drizzle melted chocolate on top.
  • Place in the fridge for 20 minutes, or until the chocolate has hardened.
  • Finally, remove from the fridge and serve! Store leftovers in the fridge.

Notes

  • Be sure to pit the dates.
  • This recipe makes about 6 to 8 cookies, depending on how big you make them.
  • Allow the chocolate to fully harden in the fridge before serving these.
  • Store in the fridge or freezer in an airtight container.
