These homemade strawberry brownies are rich, sweet, bright, and delicious! They are filled with plenty of real strawberry flavor. The pink strawberry glaze is the perfect topping!

Instructions 

  • First, preheat the oven to 350 degrees Fahrenheit. Line a 9-inch square pan with parchment paper.
  • In a large mixing bowl, stir together the melted butter and melted white chocolate.
  • Add in the eggs, egg yolk, sugar, and vanilla. Stir vigorously until light and frothy.
  • Add the freeze dried strawberries to a food processor. Process until finely ground. Fold in the flour, salt, and ground freeze dried strawberries. Stir together.
  • Transfer this batter to the lined pan. Bake for 25 to 27 minutes or until a toothpick inserted comes out with only moist crumbs.
  • Once the brownies have fully cooled, make the glaze. Process the freeze dried strawberries until finely ground. Combine the powdered sugar, milk, and ground freeze dried strawberries in a small bowl. If needed, add another drop of milk to achieve a creamy consistency.
  • Finally, spread the glaze on top of the brownies. Slice and serve!

Notes

  • Use high quality white chocolate that melts well.
  • Both regular all purpose flour and gluten free flour work well.
  • Do not replace the freeze dried strawberries with fresh strawberries.
  • Finely ground freeze dried strawberries are vital to this recipe.
  • To make the glaze thinner, add more milk.  To make the glaze thicker, add more powdered sugar.
  • Store in the fridge for up to 4 days.
