Ingredients

Instructions 

  • First, preheat oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper.
  • Add all ingredients to a mixing bowl. Stir until completely combined.
  • Form dough into 12 equal sized balls. Place on baking pan. Use a fork to gently press down in a criss cross pattern.
  • Bake cookies for 9 to 10 minutes.
  • Finally, remove from oven. Allow cookies to cool before transferring to a wire rack.

Notes

  • Use all natural creamy peanut butter made with only peanuts and salt.  Do not use peanut butter with added oils or sugars.
  • Stir peanut butter before measuring.
  • Cookie dough will be thick.  Be sure to fully mix.
  • These cookies do not spread while baking.  Feel free to place them somewhat close together while baking.
  • Bake until cookies look just barely set in the middle.  They are meant to be soft.
  • Store in an airtight container for up to 3 days.  These cookies are best eaten within 24 hours.
  • This recipe makes 12 small cookies or 7 to 8 large cookies.
  • To calculate net carbs, subtract fiber from total carbs.  For each cookie, 4 grams carbs - 1 gram fiber = 3 net carbs.
