Vegan Blondies
These Vegan blondies are gooey, chewy and so delicious! This quick and easy recipe takes less than 30 minutes from start to finish. They are great for holidays, Christmas, birthdays and more!
First, preheat oven to 350 degrees Fahrenheit. Line an 8 inch square pan with parchment paper.
In a mixing bowl, add melted butter and brown sugar. Stir to combine.
Add in vanilla extract and applesauce.
Then, add in flour, baking powder and sea salt. Stir to combine.
Fold in chocolate chips.
Transfer this dough into the parchment lined pan. Press down into an even layer.
Bake for 18 to 20 minutes or until the middle is set. Do not over bake!
Finally, remove from oven. Allow blondies to cool in pan for 30 minutes before slicing and serving.
For Vegan baking, I recommend Earth Balance butter. Any brand should work though.
Both regular flour and gluten free 1 to 1 flour can be used. Since I am gluten free, I used King Arthur Flour gluten free 1 to 1 flour.
The applesauce replaces eggs. I much prefer this to flax eggs or chia eggs.
Do not over bake these blondies! They really only take about 18 minutes.
Store leftovers in an airtight container at room temperature for up to 4 days.
They freeze well.
