Whole30 Chicken Tikka Masala
This Whole30 Chicken Tikka Masala is bursting with hearty flavors. Tikka Masala sauce is traditionally an Indian dish and is made with a number of different flavors including tomatoes, ginger, turmeric, cinnamon and cardamom. The end result is a slightly sweet and slightly spicy flavor combo. This chicken has so much depth that I like to serve it over cauliflower rice, which really allows the chicken to shine. This is such an easy and delicious dinner for the busy week or a showstopper for a weekend!

Cook Time: 20 minutes
Total Time: 25 minutes

Servings: 4 servings
Ingredients:
1.5 lbs chicken breast, cut into 1 inch cubes
2 TBL olive oil
1/2 cup Whole30 Tikka Masala sauce
3 cups cauliflower rice
Directions:
Add cubed chicken and 1 TBL of olive oil to a skillet over medium. Cook, turning occasionally, for about 5-7 minutes or until cooked through.
Meanwhile, add riced cauliflower and remaining 1 TBL of olive oil to a skillet over low. Cook for 10 minutes, stirring every few minutes.
Once chicken is cooked through, add Tikka Masala sauce and bring to a light boil. Reduce heat and let simmer for 5-6 minutes until sauce thickens.
Serve chicken over cauliflower rice.
